Healthy Living London’s resident chef, Susie Morrison of Gourmet Glow, has created a new spice blend for Steenberg Spices recently launched Swell range. The Swell range is focused on improving digestive health.
Susie’s new spice blend, Digestivo, is inspired by Ayurvedic principles and contains a special mix of fennel, dill seed, cumin, pink Himalayan salt, ajwain seed, black pepper, fenugreek and asafoetida. The blend has an earthy flavour and can be used in a wide variety of ways.

DIGESTIVO STUFFED COURGETTES: The first of many ideas on how to use my new spice blend Digestivo from www.steenbergs.co.uk/new. These are amazing served with a dollop of yogurt or grated cheese! 1. Preheat oven 180CScoop the insides out of 6 halved courgettes and roughly chop into a bowl, leaving the halves hollowed. 2. Fry one thinly sliced onion in 2tbsp olive oil for 3 minutes until soft. 3. Add in 2 cloves crushed garlic, the courgette insides, 2tbsp Digestivo Spice blend and 1tsp ground turmeric. 4. Cook for 2 minutes, stirring before adding the zest and juice of half lemon. Add in 1 drained can chickpeas and 250g cooked rice. 5. Taste, add salt and pepper if needed (the spice blend contains salt) and remove from heat. 6.Stuff the courgettes with the mix, drizzle with a little more olive oil and bake for 20-30 minutes depending on the size of your courgettes.
