The first thing I’d spiralise is raw beetroot. It’s in season at this time of year so I can buy it locally and it’s packed full of amazing nutrients. I love the fact that it’s high in antioxidants that help to reduce inflammation in the body. It’s so delicious and will make a beautiful colourful summer salad.
