If you’re after a sweet treat that doesn’t use refined sugars, this Raw Vegan Salted Caramel Brownies recipe is it! Using a blend of nuts, superfood powders and dried fruit, this is easy to make and doesn’t even require any cooking. With all the taste of a normal brownie but with less of the rubbish, this is one treat you want to make sure you’ve got a stockpile of in your fridge for when you need it.
Maca powder is rich in vitamins B, C and E, calcium, zinc, iron and magnesium. It has especial benefits for women, including decreasing menopause symptoms, sexual function, improved mood and helping maintain bone density. Lucuma is a Peruvian fruit with a mild, sweet taste that gives these brownies their caramel taste. In Peru, lucuma is a symbol of longevity and fertility. It’s rich in beta-carotene which helps support eye health, as well as helping ward off colds and flu.
Raw Vegan Salted Caramel Fudge Brownies Recipe
Ingredients
- 2 cups dates (1 soaked overnight in water)
 - 1 cup raisins
 - 1 cup cashews
 - 1/4 cup sunflower seeds
 - 2tbsp lucuma powder
 - 1tbsp Maca root powder
 - 4tbsp raw cacao powder
 - 1tsp Himalayan pink salt
 - 3tbsp raw cacao nibs
 - 6tbsp melted coconut oil
 
Method
- Blend the soaked dates, raisins, sunflower seeds, powders and salt to a fine paste in a high speed blender.
 - Add the unsoaked dates, cashews and cacao nibs and pulse until medium chinky.
 - Blend in coconut oil.
 - Turn into a prepared baking tin ( 20cm X 20cm) lined with cling film and refrigerate overnight. Cut into squares of your choice.
 
These are good eaten from the fridge (will keep 5 days) or straight from the freezer (3 months). If they last that long!
To note: Even though this recipe contains natural sugars, they are still sugars, even if they’re unprocessed and unrefined so eat in moderation, or better still, share with friends.
