Red Chilli Kitchen is the brains of Thao, a Vietnamese woman who came to the UK not knowing how to cook. With the help of her mother, she soon got to grips with flavours from home and realised she had quite the knack at creating easy to use sauces. Thao’s Suffolk life once looked quite different; having spent her formative years in an idyllic Vietnam, living at the foot of a gorgeous mountain, she had to flee in 1984 as the ‘Vietnamese Boat People’. After drifting at sea with a broken propellor, they were lucky to be rescued. Thao was sent to an Indonesian children’s home and eventually resettled in Denmark where eventually, she was reunited with her family.
What we love about this Vietnamese Chilli Paste is that you don’t need a lot to make an impact – the chilli has a definite bite and it turns the most boring meal into a delicious feast. We used 2 tablespoons in a stir fry for four people and it was more than enough. Keep the rest in a fridge and it’ll last you for ages – it’s like the pot of sauce that just keeps on giving!
