The lovely Ashlie Cherry has been experimenting with healthy meals that also keep her manly other half happy. This baked turkey meatballs meal incorporates a decent whack of protein with healthy carbs which is lip-smackingly satisfying.

Serve with spelt spaghetti, black rice or spiralised courgette.
As a lover of Italian food I’ve (sinfully) always loved meatballs; however my other half isn’t a fan of mince so we tend not to have them very often. I made these turkey meatballs recently and he loved them (I think the chilli helped). I opted for turkey mince as a healthy alternative to beef mince. It was a really sunny day and I wanted to sit on the balcony and enjoy the last rays of sun rather than stand at the hob cooking so opted to bake them in the oven instead and they are actually much nicer cooked this way, this recipe keeps the turkey really juicy and not dry like is often the case. We ate our meatballs with spelt spaghetti and a little parmigiano, but you could opt for gluten free pasta, black rice or simply salad. Enjoy!
Ingredients
Meatballs:
- 400g turkey mince (organic)
- 1 tbsp chopped fresh parsley
- Pinch of fresh black pepper and sea salt
Sauce:
- 1 400g can of chopped tomatoes (organic)
- 2 cloves garlic
- 1 fresh red chilli
- 1 tbsp coconut oil
- Small bunch of finely chopped fresh basil
- 1 tsp dried thyme
- 1 tsp paprika
- Pinch of fresh black pepper and sea salt
Instructions
- Preheat oven to 180°C
- Crush the garlic, dice the chilli and fry both with a small amount of coconut oil. Once the garlic has turned a golden brown add the remainder of the sauce ingredients. Bring to the boil and leave to simmer for 10 minutes.
- Put all the meatball ingredients into a bowl and mix everything together. Roll into small meatballs.
- Grease an oven proof dish with the remainder of the coconut oil and evenly place the meatballs inside.
- Pour over the tomato sauce and place in the oven for 20 minutes.
- Serve with a side of your choice!
