It is officially autumn next week… I know, what happened to summer? Tree leaves are starting to fall, the days feel gloomier and rain seems to be the main forecast. Thankfully, the clocks don’t go back until the end of October, but I am already starting to seek out comfort food. One of my favourite go-to comfort foods is soup. Hot tomato soup always brings up fond memories of my school bonfire night; we were given a cup of tomato soup to drink whilst standing in the cold, waiting for the fireworks to begin, in the hope that the soup would warm our hands. Soup has always been a comforting food; I especially crave it when I feel a little under the weather. As the days are getting darker, I am grateful for the warmth that soup brings. Mash Direct have shared their Carrot, Parsnip & Coriander Soup recipe and this may just be a new favourite.
Carrot, Parsnip & Coriander Soup
Ingredients:
- 1 pack of Mash Direct Carrot & Parsnip Mash
- Olive oil
- 1 medium onion
- 1 garlic clove
- ¼ teaspoon turmeric
- 1 teaspoon dried coriander
- 250ml chicken or vegetable stock
- 3 tbsp cream
- Salt & pepper
Method:
Add the oil to a large saucepan and sauté the onion for about 5-8 minutes, until they are soft and translucent.
Add the crushed garlic, turmeric and coriander and cook for a further 2 minutes.
Next, add the Carrot & Parsnip Mash and the stock. Simmer gently for a further 15 -20 minutes on a medium heat.
Puree the soup. Taste, and season with salt and pepper.
Add the cream and bring the soup back to a simmer.
Serve the soup with a teaspoon of freshly whipped cream, and some chopped, fresh coriander.
