It is officially autumn next week… I know, what happened to summer? Tree leaves are starting to fall, the days feel gloomier and rain seems to be the main forecast. Thankfully, the clocks don’t go back until the end of October, but I am already starting to seek out comfort food. One of my favourite go-to comfort foods is soup. Hot tomato soup always brings up fond memories of my school bonfire night; we were given a cup of tomato soup to drink whilst standing in the cold, waiting for the fireworks to begin, in the hope that the soup would warm our hands. Soup has always been a comforting food; I especially crave it when I feel a little under the weather. As the days are getting darker, I am grateful for the warmth that soup brings. Mash Direct have shared their Carrot, Parsnip & Coriander Soup recipe and this may just be a new favourite.

I like the carrot & parsnip mash as it can be used in several of these recipes and is the foundation of the Carrot, Parsnip & Coriander Soup recipe. However, it is worth noting that the mash is not vegan as it does contain butter. The ingredients are – Carrot (59%), Parsnip (39%), Butter (Milk), Salt.
