Baobab ‘The Upside Down Tree’ One of the most long lived of vascular plants and steeped in mythical and medicinal nuances. Native to Madagascar, Africa & Australia, these trees are as awe inspiring as the fruits they produce.
Large, Oval and berry like in shape, the fruits are amongst some of the only known to desiccate naturally on the tree. When ground they yield a powder with a mellow citrus note, accentuated by berry like flavour compounds.

Using baobab powder
The mellow flavour compounds pair so well in both sweet and savoury dishes. Aside from the obvious addition to smoothies and porridge, I had so much fun incorporating this into so many dishes.
Personal favourites included adding it to Miso and sesame oil in a marinade for aubergine before grilling where it imparted a sweetness akin to the flavours in Japanese Nasu Dengaku. I also added some to a cinnamon spiced no churn ice cream, the fat molecules absorbed the sweetness perfectly, it was sublime.
Perhaps my favourite was in a cocktail made from a liqueur of the Marula Berry. This is also a native African Tree, so my ethos of ‘what grows together, goes together’ was put into play. Blended into the creamy liqueur with a dash of vodka it was the perfect way to unwind after a long day.
In essence, this ‘nutrient powerhouse’ is so versatile and so delicious. The only limits are those of your imagination, I can highly recommend playing around and seeing what combinations are your favourites.
