This healthy veg smoothie recipe is essential when you feel like you need more greens in your diet or have had a particularly hectic / drunken / stressful day. As the name suggests, it’s pure veg – no messing around.
So we have a confession to make. This isn’t really a smoothie. It’s not got any milk in it. But due to its consistency, we’re calling it a smoothie. As it’s not really a juice either – it has bits in it. This tastes fresh and healthy, yet inoffensive. It’s also filling and if you add seeds to it, you get a delicious nutty taste.
Ingredients
- 2 raw carrots, roughly chopped
- 3 handfuls of fresh or frozen spinach
- 1 inch of ginger, peeled
- Juice of 1 lemon
- 1 tbsp of Cherry Active
- 2 mugs cold water
Method
- Blend everything together well. If it’s too thick for you, just add more water.
- Serve immediately – as the carrots can be quite pulpy, this can separate if left too long.
We used a Nutribullet for this but a hand blender works just as well, although it may be less smoothly blended.
Getting vegetables into your diet if you live the fast and furious London pace can be tricky – especially as it’s sometimes easier to eat a sandwich on the go, rather than a salad. Yet it’s so important. This is why we love our veg smoothies – it’s a vegetable hit that is quick and easy to make and also keeps you full. It’s not a meal replacement but an addition to our diet.
