With Halloween around the corner, the green grocers here in North London are piled high with pumpkins. As is tradition, we will be buying a couple to carve into lanterns. But as I try to avoid food waste, I have found myself doing my usual search for vegan friendly pumpkin recipes.
I wanted to share some of my finds here and direct you to some delicious pumpkin treats! And these are also a good way of cashing in on the potassium and beta-carotene (a carotenoid that converts to vitamin A), calcium, magnesium and vitamins E and C that are found in pumpkins.
BBC Good Food
As always, BBC Good Food have come up with a delicious array of pumpkinny recipes. With everything from pumpkin hummus and pumpkin soup, to pumpkin pancakes and even pumpkin cheesecake! There is also a roasted pumpkin seed recipe to make sure no part of your pumpkin goes to waste.
Tesco Online
Tesco’s website offers a ’10 of the best pumpkin recipes’ page, including this delicious looking pumpkin and harissa winter bake, which I will certainly be trying out!
The Minimalist Baker
Blogger, The Minimalist Baker, has some delicious pumpkin recipes including this vegan pumpkin spiced latte as well as tips on how to roast a pumpkin and make your own pumpkin puree.
Good Housekeeping
I was lured in by Good Housekeeping magazine, with this gorgeous looking vegan pumpkin focaccia.
Olive Magazine
And Olive Magazine offer this great recipe for pumpkin seed butter, served on rye bread.
Healthy Living London
